Appetizer Recipe: Cheesy Shrimp Dip

Summer is a time for family gatherings and dinner parties with friends. The best way to be prepared for this season is to have a good repertoire of delicious, and easy appetizer recipes. This appetizer is my take on Chili con Queso. It was a major hit at my book signing, everyone wanted to know what page it was on; page 35 in Simply Delicious Appetizers!


  • 5 ½ ounces goat cheese
  • ½ pound sharp Cheddar cheese
  • ½ pound dill Havarti
  • 8 ounces cream cheese
  • 2 cups chopped red onion
  • 2 chopped jalapeno chilies
  • 2 diced tomatoes
  • ¾ pound cooked bay shrimp (Bay shrimp are the tiny ones) 

Over low heat melt cheeses in medium heavy pot until combined stirring occasionally. Add remaining ingredients. Serve warm with tortillas or Fritos.
