Chicken Ratatouille

This recipe is a great way to use end of summer produce like Zucchini and eggplant, but any assortment of or additional vegetables can be used. It's quick and easy and is sure to satisfy. Go out to your nearest farmers market, pick up some fresh veggies, and then whip up this dish. 


  • 2 chicken breasts, skinned, boned, and cut into 1-inch cubes
  • 3  tbsp. or more olive oil
  • 1 zucchini, unpeeled, thinly sliced
  • 1 small eggplant cut into 1-inch cubes
  • 1 onion, thinly sliced or chopped
  • 1 green pepper cut into 1-inch pieces
  • 1/2 lb fresh mushrooms, wiped clean and sliced
  • one (16 oz) can whole tomatoes, cut up
  • optional: 8 oz can tomato sauce
  • 3 garlic cloves, minced
  • 1 1/2 tsp. dried basil, crushed
  • 1 tbsp. fresh minced parsley
  • freshly ground pepper

In a large skillet  (or wok) heat the oil. Add the chicken and sauté until lightly browned, about 4 minutes.

Remove chicken from the skillet (if skillet is small) and set aside.

Add a little more oil if needed and sauté vegetables, stirring occasionally, until they are done the way you like them (crunchy, soft),  5 to 10 minutes. Add tomatoes and tomato sauce, if using, garlic, basil, parsley, and pepper. Stir and cook for a minute or two and return chicken to the pan.

Cover and continue cooking, stirring occasionally, until vegetables and chicken are tender and done,  5 to 10 minutes.

Serves 4.
