Gorgonzola Cheese and Walnut Pizza

By: Sheilah Kaufman

I am fortunate to belong to the women's organization, Les Dames d'Escoffier, the DC Chapter. At a "bring it night" committee meeting, Camilla brought this pizza. Camilla, is a fabulous cook, and works with the famous Nora Pouillon at her famous restaurant Nora. This recipe is so quick and easy to make, you'll be enjoying it in no time!

  • 1 pizza crust (I use the thin crust in the refrigerator section of the market)
  • 3 tbsp. butter
  • 3 large red onions, sliced thin
  • 1 cup Gorgonzola de dulche, sweet and soft, or plain Gorgonzola
  • 1/2 cup coarsely chopped walnuts
  • freshly ground black pepper

Preheat oven to 475°F. Roll out dough and place in a round or rectangular pizza or baking pan. Melt the butter in a large skillet over medium heat. Sauté onions until nicely caramelized, about 40 minutes. Scatter onions over the crust and top with crumbled cheese and nuts. Bake about 15 to 20 minutes or until done.
