How to Survive: Impromptu Happy Hours

Darlings, this recipe has proven to be the most popular appetizer I serve. It is devoured by my guests! It is so delish and has ‘a flair of its own!’ When my guests feast their eyes on it they smile because of its multi colored design. My company always ooze and ahhs and then literally digs in and cannot stop! I guarantee you  success. I promise you there will be nothing left on the platter and your guests will beg you for this recipe. Thanks to California Heritage Continues, I am able to share it with you.  

Avocado Dip:

  • 4 ripe avocados, mashed                                     
  • ½ cup sour cream                                                 
  • 1-2 drops Tabasco sauce                                    
  • 1 garlic clove, minced                                            
  • 1 tsp salt                                                       
  • ¼ cup fresh lemon juice

Remaining Ingredients:

  • 4 oz grated Cheddar Cheese
  • 4 oz Jack cheese, grated
  • 4  medium tomatoes, diced
  • ½ cup green scallions
  • ¾ cup sliced pitted black olives
  • ¾ cup sour cream
  • 1 cup Salsa                 
  • 1 cup chopped fresh cilantro

On a round serving platter, layer ingredients in the following order: avocado dip, cheeses, tomatoes, green scallions, olives, sour cream, salsa, cilantro.

Serve with chips. I like either Regular Tortilla chips, or Black Corn chips. Serves 8.
