Recipe: Red Velvet Sandwich Cookies


I think the title explains it all. Yes, they are as good as they sound and taste even better. I recently found this recipe on Pinterest while I went on a Red Velvet Cake binge and I was lost for words after making these.  They are easy to share and perfect to bring to a pot luck/party/keep at home and eat yourself. They are addictive so make sure you try and contain yourself!


  • Cookies:
  • 1 Box Red Velvet Cake Mix
  • ½ cup unsalted butter, softened
  • 1 tbsp flour
  • 2 eggs
  • Frosting:
  • 1 (8 ounce) package of cream cheese, softened
  • ¼ unsalted butter, softened
  • ½ tsp vanilla extract
  • 1 cup of powdered sugar, sifted


  1. Preheat the oven to 350 degrees. In a large mixing bowl, combine all the cookie ingredients together and whisk well until blended.
  2. Scoop one tablespoon for each cookie and roll into balls. Place each cookie ball (around 36) on a silicon-lined cooking sheet (or non-stick) and bake for 10-12 minutes.
  3. Once fully cooked, remove and allow to cool on a cooling wire rack.
  4. While the cookies are cooling, to make the frosting, cream together the cream cheese and butter in a bowl, add vanilla and mix well. Slowly sift in the powdered sugar and mix well until creamy and smooth.
  5. Once the cookies are cooled, add the frosting to each cookie bottom and combine two to make a sandwich. Enjoy!
