During this time of year, fruit is plentiful, ripe and bursting with incredible flavor. Nothing is more perfect than a juicy watermelon to quench your thirst and hunger all at the same time. A great little recipe I like to whip together is a fresh fruit salad with lots of watermelon. You can of course use any fruit you would like but the combination of these ingredients blend so perfectly in each little bite it’s hard to put down the spoon. To make this dish a little extra special, keep half of the watermelon rind and use it as a decorative serving bowl!
- 1 cup lemon yogurt
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 2 cups watermelon balls
- 2 cups cantaloupe balls
- 2 cups halved fresh strawberries
- In a large salad bowl, whisk together the lemon yogurt, honey, and lemon juice until smooth.
- Gently fold in the watermelon balls, cantaloupe balls, and strawberries.
- Toss to coat, and serve.
- This can also keep quite well in the refrigerator but don’t leave for more than a day. (You won’t be able to keep it that long anyway!)
