Recipe: White Chocolate Cranberry Cookies

By Jacquelyn Prater. It's the most wonderful time of the year! With the holiday season barreling towards us, it seems there is no shortage of sweet treats around. Here is a recipe for a deliciously festive cookie that makes a great addition to any potluck or holiday table. And hey, it has fruit in it, so it's healthy...right?

  • 1 1/4 cups of flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 brown sugar
  • 1/2 cup granulated sugar
  • 1 cup white chocolate chips
  • 1/2 cup dried cranberries
  • 1 egg
  • 1/2 tbsp of vanilla extract
  • 1/2 cup of butter, softened

  1. Preheat oven to 350 degrees.
  2. Mix flour, salt, baking powder and baking soda together in a small bowl.
  3. Cream together the butter and sugars in a stand mixer (or with a hand mixer) until light and fluffy.
  4. Add egg and vanilla to butter mixture. Once combined, add the flour mixture and mix until it comes together.
  5. Stir in chocolate and cranberries. Now, you can either drop tablespoons of batter onto baking sheet and bake for 10-15 minutes, or form the dough into a log shape and refrigerate. Once the dough is chilled, you can then slice off cookie rounds and bake. This will require an extra few minutes of baking time, so keep an eye on them.

Happy holidays!!
