Watermelon Salsa

Watermelon Salsa is the perfect antidote to the scorching summer heat. On top of this, it is super simple to create. Note: this salsa must be prepared within 2 hours of serving or the watermelon will be mushy.


  • ¼ cup fresh lime juice
  • 2 tbsp packed brown sugar
  • 3 cups seeded, diced watermelon
  • 1 cup seeded, diced honeydew melon
  • 1 seeded, diced cucumber
  • ½ cup chopped red onion
  • ¼ cup chopped fresh mint
  • 2 tbsp finely chopped crystallized ginger
  • 2 tbsp seeded, minced jalapeno chilies

Whisk lime juice and sugar in large bowl until sugar dissolves.  Add remaining ingredients; toss gently; season to taste with salt and pepper. Cover; chill before serving.
